NICE DISHES. DUCHESS Sovi,Three pounds shin of beef, four carrots (one grated), four onions, one head of celery, three quarts of water, and a little seasoning. Cut everything up fine, and put on in cold water in a saucepan with a small cup of pearl barley. Boil gently for two hours. l'epper and salt to taste. MABZII'AN IVAL.NL;rs.-Tliis marzipan also makes a very good icing for cakes. One pound of walnuts, one pound of icing sugar, half a pound of ground almonds, one egg, almond essence and orange-flower water. Shell the walnuts and divide into halves. Beat the white of egg to a stiff froth, mix in ground almonds and from three-quarters to one pound of icing sugar until a very stiff paste is formed. Add two or three drops of almond essence and a small teaspoonful of orange-flower water. Roll into small pellets with the hands, and place half a walnut on each side. This may be varied by using dates or crystallised fruits. SALMI OF COD.—Make some good puff pastry, and with it line a flat dish fill it with some raw rice and bake till the pastry is done. Now take half a pint of milk and put it on to boil: wash and dry one pound of cod steak, place in the milk, add pepper, salt, and a piece of bay leaf, and stew for ten minutes. Take up the iish carefully and put on a hot dish; dissolve one ounce of butter in a saucepan, add a tablespoonful of flour, cayenne and salt to taste, and stir till all is nicely blended; then strain in the fish stock and stir till it boils. Cook for three or four minutes add a few drops of tarragon vinegar, a teaspoonful of anchovy sauce, and some shrimps. Take the rice out of the pastry, put the fish on it, and pour the thick boiling sauce over. Decorate with tiny fillets of anchovy, leaves of parsley, and chopped yolks of eggs. Serve very hof. SCALLOPED TOMATOES. Season one quart of tomatoes with pepper to taste, and a few drops of onion juice. Butter a deep baking dish, sprinkle over it a layer of breadcrumbs, and put in a layer of tomatoes. Dot with bits of butter, then bread- crumbs, tomatoes, and so on until the dish is full, the breadcrumbs being on top. Moisten with stock or a tablespoonful of white wine, and bake in a moderate oveD, Erowu just befere semilog to tIJø table. t
BARRY SCHOOL BOARD. --
BARRY SCHOOL BOARD. THE LAST MEETING. CHAIRMAN AND OFFICIALS THANKED. SOUND FINANCIAL POSITION. Dr W. Lloyd Edwards (the chairman) presided over the last meeting of the Barry School Board on Friday afternoon, the other members present being Rev W. Williams (vice- chairman), Rel- a Ben Evans, D. H. Williams, M.A., and J. Byrne, and Mr F. W. Hybart. FINANCIAL POSITION. The Clerk (Mr Gwyn Morris, Ll. B.) produced a financial statemert showing that the Board had a credit balance of about £ 2;000 when passing from office. The Chairman That is very satisfactory, seeing that we were told to pay all our liabilities.! TRIBUTE TO TIIE OFFICIALS. The Chairman said that as that was the last meeting of the Board, it was advisable that the Clerk and Deputy-Clerk should be granted testi- monials, and at the same time refer both to the new authority for earnest consideration. Of course, every member of the Board must fsel for them'. The change did not affect members of the Board ia a financial way, except in a way that would be beneficial perhaps—(laughter)—but, unfortunately, the clerk and deputy-cleik would, unless the new authority gave them proper consideration. The Rev J. Byrne rose and proposed a vote of thanks to the clerk (Mr Gwyn Morris, Ll. B.) and the deputy-clerk (Mr R. Treharne Rees). The clerical duties of the Beard had been done in a conscientous way, and quite satisfactory to the Board. In fact, they had done their work well, The Board did not send them away, neither had they ai y desire to part with them. Circumstances, however, required them to separate, and it was only just that the chairman and members of this Board should recommend them to the incoming authority aud sincerely hope that the new authority would treat them with the same consideration as had always been their desire and duty to do. (Hear, hear). Both had laboured assiduously and faith- fully, because in their position fidelity may be con- sidered a most personal and relative action. They had performed their duties with great satisfaction to the Board and witL great facility and kindness to the teachirs with whom they had come in con. tact, and it was the wish of the Board that the friendly feeling should be continued. They also asked the new authority to take them over in the same spirit and treat them in the same way as they had been treated for yeats by the Board which would now cease to exist. (Hear, hear). The Rev D. H. Williams, M.A., in seconding, asked to associate himself entirely with what the Rev J. Byrne bad said, for he believed that that gentleman had expressed the views of the whole Board. They all felt very sorry for the officials who had been placed in an aw kard and unfortunate position, but he hoped that they would le generously treated, and that the new authority would realise the position and act up to their re- sponsibilities, (Hear, hear.) The resolution was then put and carried. Mr Gwyn Morris, in returning thanks, said be felt grateful to the Board for the kind manner in which their services had I)-eri appreciated, and he likewise thanked the Rev J. Byrne for the almost too generous references made to himself for the manner in which the officials had performed their duties. He felt s rry that Mr Rees was not present that day, for he felt sure it would have afforded him equal pleasure to have heaid their kind sentiments. He had found Mr Rees s services valuable, find they had worked together very hum urously. They had been placed in a serious position by being deprived by statutory enactment of positions in which they looked forward to per- form honourable service. It was not through any fault < f their own, therefore, that this Act of Pailiament had deprived them of their means of livelihood, but he was glad to s.y that the recent d. cisicn of the Board ot Education as to the desira- bility of continuing their services had made the clerks practically transferred officers. It was agreed that the testimonial to the Clerk and Deputy-Clerk should be prepared by the Revs J. Byrne and D. H. Williams, M.A., a'¡d that the seal be affixed. REMINISCENT. The Chairman then addrs ed the members on the origin and work of the B .ard. The Board had been in existence nearly 29 yc,rs, and during that time the numbers on the registers had risen from 60 to 60,000, and paid a high tribute to the ability of the teaching staff which was an excellent one in every respect. In concluding his remarks he ex- pressed that the status of the local schools would be maintained in the front rank. (Cheers). The Vice-Chairman (Rev W. Williams) proposed a vote of thanks to the Chairman and referred to his greit t'al and enthusiasm iu the cause ef educa- tion as being unbounded. Mr F W. Hybart seconded and declared that if anything the Chairman could be comphmented upon the great energy and ability he had thrown into the work of the Board. (Cheers). The Rev Ben Evans added his tribute to the way in which the Chairman had conducted the pro. ceedings throughout and the entire absence of unpleasantness. The Rev D. H. Williams, M.A., said the Chair- man had been referred to as a faddist but man had been referred to as a faddist but he preferred to call him an idealist and through being an idealist he had taught them all a great deal.
