B R A y D A YERY general impression prevails among the people of this country that Brandy is distilled by the Merchants abroad who ship it here, and whose names have in the popular inijd become synonymous with the words ;• Cognac Brandy A very short explanation will show how totally with<ff foundation^ this'impression is. Brandy is really made by the numerous large and small proprietors of Vineyards around Cognac, in the Charente Inferieure, W 1+r! 'U'Ce"'f e the"' fraP«s Illto vv'ne, and as soon as the fermentation has ceased, set to work and distil the ine, the spirit from which is the Brandy of Commerce. In medSelv after the distillation is completed, the Brandy is purchased in large quantities by the Cognac Merchants it to the various markets for which they have orders. The fanners take their Brandy to market, just as farmers here do their corn, and, as a rule, vie with each other m their endeavours to get a name for quality, and each 22 his own judgment in selling-some selling it at once, some preferring to hold over and sell it when old, and some doin" both. A great quantity of each year s produce is purchased in this country and brought over at once and ke»t inlbond till such time as it is wanted for use. It is a mistake the public make to suppose that because Brandy is bottled in France, and bears this name or that, it is therefore better or older than what respectable merchants sell ia England. Composed of Guano imported from islands at the equator in the Pacific Ocean, richer in phosphoric acid than any other known Guano. The ammonia is in a pure and ready formed state, immediately available for assimilation by plants. This Guano gives to Crops a greater chance in unfavourable seasons, and in proof of its powerful fertilising qualities, has invariably produced a greater maximum weight of produce in bulk as well as in specific gravity. Though so entirely soluble, it is in an easy dry condition for spreading on the land, and being highly con- centrated, much money and labour are saved in carriage and handling. The application of PHOSPHO-GUANO restores to the soil in the cheapest form the weight of fertilising properties extracted by the crops, chiefly because it contains such an excess of phosphoric acid, and because it is a true Guano the deposit of sea birds, and a condensed equivalent to farm-yard manure.
