Salad. Three lettuces, some mustard and cress, eight or nine radishes, and a few slices of cucumber. Wash and drain the greens, aud dry them by swinging lightly in a clean cloth. Cut or break the lettuces into small pieces, the radishes and cucumber in slices, and arrange Alllightly together on a dish, with rings of cucumber and hard boiled eggs around. When wanted for use pour around a dressing.

.Queen Cakes.
Queen Cakes. iIbflour, Jib butter, fIb sugar, 2 eggs, fIb currants, teaspoonful of baking powder, essence of lemon or vanilla. Cream together the butter and sugar, add the eggs one at a time, and lastly the iiour, currants, and powder. Put the mixture into small well-greased patty tins, and bake about 20 minutes in a moderate oven. Sponge-cake Pudding. Take one or two stale sponge cakes or jam sandwiches, cut into strips and spread with strawberry or raspberry jam. Cut these into pieces and put in a glass dish, soaking lightly with rasin wine. Allow it to stand for half an hour, then pour over a rich thick custard. Lemon Dumplings. lIb of grated breadcrumbs, lIb suet, fIb moist sugar, 2 eggs, and 1 lemon. Mix together the breadcrumbs, suet, sugar, and lemon peel finely minced. Beat up the eggs, and add this and the juice of the lemon to the dry ingredeints. Mix all well together, and put the mixture into small buttered cups or moulds, and boil for one hour. Sprinkle castor sugar over them when done. -L.0-
