Foam Pudding.
Foam Pudding. 2 eggs. 2oz fine sugar. loz cornflour. 1 pint milk. Vanilla flavouring. Put the milk into a saucepan to get hot (reserving enough to mix the cornflour), beat the yolks of the eggs and the sugar together. and add the cornflour after mixing it with a little cold milk. When the milk in the sauce- pan is at boiling point, pour over the eggs, &c., stir well and return to the pan to thicken. When cold, flavour with vanilla and pour into a dish. Beat up the whites of the eggs to a stiff froth, add a desert-spoonful of fine sugar, and spread over the custard. Put into the oven until baked a pale brown.
