Economical Dinners for a week. SUNDAY Roast sirlion or ribs of beef, baked potatoes, horseradish sauce rhubarb pudding and custard. MONDAY Cold beef, mashed potatoes and beetroot; sago pudding. TUKSDAY Soup made from the beef bones, rissoles, potatoes, and sprouts bread and butter pudding. WEDNESDAY Fried plaice, mashed potatoes and plain white sauce jam-roly pudding. 0 THURSDAY: Half a shoulder of mutton, onion sauce and potatoes rice pudding. FRIDAY Remains of the cold mutton, pota- toes, and salad; stewed prunes or baked apples. SATURDAY Boiled cod, parsley sauce, and mashed potatoes custard pudding.
Lemon Pudding.
Lemon Pudding. lIb chopped suet. i1'b bread crumbs. x I large, or 2 small, lemons. fiozs fine sugar.. fIb flour. 2 eggs and milk. Mix the suet, bread crumbs, sugar and flour together, add the grated rind and juice of the lemons,, the eggs well-beaten, and lastly sufficient milk to make the mixture a thick batter, Put into a greased mould and boil for Ht hours.

Apple Snow. Five good sized apples, the whites, of five eggs, å Ib of fine sugar, and rind of one lemon. 0 y Peel, core, and cut the apples into quarters, put them into a saucepan with the lemon rind and i teacup-ful of water. Stew slowly, and when done beat to a pulp. Allow them to cool, and in the meantime be whipping up the whites of the eggs to a stiff froth. When this is done, gently add the apple pulp and sugar, whisking again untii.it will stand on the beater. Lightly drop the mixture into a glass dish and decorate with coloured jelly. If this is made some time before wanted for use, it should be kept on ice.
