Junket and Cream. Junket is most wholesome and delicious, and is recommended for in-valids with deli- cate digestion. With the addition of cream it is most nutritious. To make junket warm slightly one pint of milk, pour into a dish, 0 sweeten it to taste and add one teaspoonful of rennet. Mix well and then leave until set. Whip up a small jug of cream, flavour it 0 with sugar, vanilla, and a little grated nut- meg, and pile lightly over the junket.

Useful Hints. If a little shredded suet is added to a milk pudding it will be as rich as if made with cream. Always keep a box of dry sand in the house where paraffin lamps are used. It will prove a good extinguisher in case of a lamp being- upset. When sweeping thick pile carpets always brush the way of the pile. By doing so they will keep clean much longer and not wear off the nap. A pinch of salt added to the coffee when made brings out the flavour.
