Junket and Cream. Junket is most wholesome and delicious, and is recommended for in-valids with deli- cate digestion. With the addition of cream it is most nutritious. To make junket warm slightly one pint of milk, pour into a dish, 0 sweeten it to taste and add one teaspoonful of rennet. Mix well and then leave until set. Whip up a small jug of cream, flavour it 0 with sugar, vanilla, and a little grated nut- meg, and pile lightly over the junket.

A Nice Sweet Omelette. Beat separately the yolks of four fresh eggs. To these add as much sugar as required to sweeten. Take a dessert-spoonful of corn- flour and very smoothly mix it with a little milk. Beat the whites of eggs to a stiff froth, and gently stir in to the yolks and cornflour, taking care to break the froth as little as possible. Pour into a clean frying pan and cook lightly on both sides. When done spread one half with raspberry jam, turn the other on to it, and sift fine castor sugar over it.

Useful Hints. If a little shredded suet is added to a milk pudding it will be as rich as if made with cream. Always keep a box of dry sand in the house where paraffin lamps are used. It will prove a good extinguisher in case of a lamp being- upset. When sweeping thick pile carpets always brush the way of the pile. By doing so they will keep clean much longer and not wear off the nap. A pinch of salt added to the coffee when made brings out the flavour. A sliced lemon put into the boiler on washing-day will help to bring out the stains 0 from handkerchiefs and other linen or muslin articles. Tables that have become marked with white, owing to hot dishes being put on them, may be cleaned by touching the spot with a brush dipped in spirits of nitre and afterwards rubbed with sweet oil.
