Dainty Apple Tart. Line a pie dish with short paste, cover the bottom with a layer of sliced apples, spread over thickly with fine sugar and a little cin- namon or lemon rind. Cover the top with a layer sponge cake crumbs instead of paste, and bake until the apples are done. When cold cover with whipped cream and ornament with a few glazed cherries and angelica. This makes a very pretty supper dish and may, if necessary, be prepared some hours beforehand, providing it is kept cool.

I Cream together the butter and sugar, add the eggs one at a time, beat again and finally add the flour, bread crumbs, baking powder and jam. Mix all well together, put into a well greased mould and boil for 2 hours. Serve with sweet sauce.

Cream together the butter and sugar, add the eggs one at a time, beating the mixture well between each, flavour slightly with vanilla or lemon essence, and then add the flour and baking powder. Put the mixture into a paper lined tin, add a slice of citron peel on top, and bake in a moderate oven for about t an hour.

Lemon Cheese. 6 Lemons. 60z Butter. 8 Eggs. lib Castor sugar. Put the sugar and eggs together in a double pan, beating them well, then add the juice oi the lemons and grated rind of four, lastly add the butter. Stir with a silver or wooden spoon until the mixture thickens, then pour into jars. Cover with oiled paper to exclude the air, and store in a cool dry place. -w-
