Orange Marmalade. Slice very thinly 12 Seville oranges and two lemons. To every lb of pulp allow two and a half pints of water. Let this stand for 24 hours, then boil until the chips are 4 1 tender. Next day add H lbs of lump sugar to every pound of the boiled fruit and boil again until quite clear. Test when done by putting a little on a plate i if it jellies it is 11 sufficiently boiled.

Dainties for Afternoon Tea. t 1b Coruflour. i lb Hour. lb Butter t lb Sugar. 1 egg, essence of vanilla, or lemon. Cream together the butter and sugar, add the egg and thou beat again for five minutes, dredge in the flour and cornflour and add the essence. Tins makes a rather stiff paste, roll out and cut into rounds with a cutter or a tumbler, bílke on a floured sheet until a light brown. When baked spread with jam and put two together.

To make Scones. 1 lb. Flour. 1 teaspoonful Baking Powder. 3 ozs Butter. 2 eggs. 6 ozs of currants or sultanas. About -1 pint milk. Mix together the flour, baking powder, and I currants. Rub in the butter, then add the eggs well beaten, and if this is not sniFicieno liquid to make it into a light dough add a little milk. Make into round cakes and cut each into four, brush them over with beaten egg, and bake for t hour in a sharp oven.
