Finger Sandwiches. 2 ozs. butter, 8 ozs. sugar, 4 ozs. flour, teaspoonful of baking powder, 2 small eggs and any flavouring desired. Cream the butter and sugar together, add the eggs one at a time, and lastly, the flour and powder. Leave one half the natural colour and to the other halt add 2or 3 drops of cochineal. Bake in a moderate oven for 20 minutes, and when cold spread with jam and place the two colours together. Ice the square (before cutting) with water ieirfg, and when set cut into finger lengths.

Cup Pudding. One cupful each of flour, suet, sugar, bread-crumbs, jam, and milk t a teaspoonful of carbonate of soda. Mix all well together and boil for 3 hours in a well greased basin.

Useful Hints. If a tablespoonful of vinegar is added to the water in which fish is boiled it will keep it firm and white. Damp salt sprinkled on a carpet before sweeping will revive the colours. Salt will remove egg stains from spoons better than anything else. If the fruit necessary for a cake be rolled in flour before adding to the mixture it will prevent it sinking to the bottom. A glass of hot water drunk just before retiring is said to ensure a good night's sleep. A few bay leaves added to stock improves t. the flavour.
